Amazake (甘酒, [amazake]) is a traditional sweet, low-alcohol or non-alcoholic Japanese drink made from fermented rice.

We make “rice koji amazake,” which DOES NOT contain any alcohol.

It’s safe and non-alcoholic, so anyone can enjoy it, including those who don’t like alcohol, children, and pregnant women.

Amazake is not only high in nutrients such as vitamin B, essential amino acids, and naturally occurring glucose, but also boosts immunity, improves gut health, and has anti-aging effects.

It is an all-natural, low-sugar sweetener that can be used to create desserts and replace sugar in many recipes!

Ingredients :

100g oats

30g rice flour

2 table spoons of Amazake

1 table spoon of maple syrup/honey

20g oil ( I recommend coconut oil!)

Nuts, dried fruit, apples, etc. as you prefer!

  1. Mix the oatmeal and rice flour together.
  2. Add and mix in all the other ingredients.
  3. Spread the mixture evenly on a baking sheet.
  4. Bake in a preheated oven at 170°C for 15 minutes. Stir the mixture once, then bake for another 15 minutes. Let it cool on the baking sheet, and it’s ready to enjoy!

Ingredients :

Amazake 250ml

egg yolk

Cream 100ml

  1. Mix all the ingredients in a blender or mixer.
  2. Transfer to a bag (like a Ziploc) or container and place it in the freezer.
  3. Every hour, knead it by hand or mix with a spoon.
  4. Once it’s fully set, scoop it out with a spoon and serve.(It will set nicely in about 2 hours.)

If you like soy milk, Add 100 ml of soy milk, 150 ml of Amazake, and a little bit of sweetener like maple syrup for extra flavour.
